At the same time I have a growing concern as to how well such business interests (although well-meaning) will be able to truly provide valid "GLUTEN-FREE" product to consumers. As a food service person for much or my first 30 years, I have been able to identify over ten significant areas of operation in such establishments, where a "G-F" product could quickly become "Contaminated".
